STRAWBERRY PIE CUPCAKES – If you are a fan of strawberries, you are going to love these Strawberry Pie Cupcakes with strawberry buttercream frosting.  I started with a box cake mix, then stuffed each cupcake with strawberry pie filling, and topped them off with the best strawberry butter cream frosting.

The frosting on these cupcakes was out of this world amazing. The addition of the strawberry pie filling in the middle made them that much more special too!

If you are needing a super strawberry dessert, I will highly suggest these little guys. They will be great for Valentine’s Day, summer BBQ, or just for after dinner dessert.

Grab yourself a cake mix, strawberry pie filling, butter, confectioners sugar, and vanilla and have these ready for dessert this evening. These were so super simple that I could probably let my teens make them on their own.

STRAWBERRY PIE CUPCAKES – DIRECTIONS
Preheat oven and line muffin tins with paper liners.
Prepare batter according to box directions.
Fill liners 2/3 full and bake according to box directions for cupcakes.
Allow to cool completely.
Placw pie filling in food processore and pulse several times to finely chop.
use a knife to core out a plug in the middle of each cupcake and fill with pie filling.
Place just the top of plug bake on cupcake.
Whip butter until smooth.
Add 8 tablespoons of chopped pie filling and vanilla to butter and beat to incorporate.
Gradually add powdered sugar and beat until blended.
Transfer to piping bag and frost each cupcake.
Garnish with fresh strawberries if desired.

  • 1 box White or Yellow Cake Mix + box ingredients
  • 21 oz Strawberry Pie Filling
  • 1 cup softened Butter
  • 4 1/2 cup Powdered Sugar
  • 1 tsp Vanilla
