Tired of boring, plain rice? Craving a burst of flavour that’s both refreshing and surprisingly simple to make? Look no further than this Cilantro Lime Rice Cooker Recipe! This recipe takes the convenience of your rice cooker and elevates it to a whole new level of deliciousness, transforming basic rice into a vibrant side dish that complements any meal.
Ingredients:
- 1 cup long-grain white rice
- 1 ½ – 2 cups water (refer to your rice cooker’s instructions for water-to-rice ratio)
- ½ teaspoon salt
- 1 tablespoon vegetable oil (optional)
- Zest of 1 lime
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice (adjust to taste)
Instructions:
- Rinse the rice in a fine-mesh sieve under cold water until the water runs clear. This removes excess starch for fluffy rice.
- Add the rinsed rice, water, salt, and oil (if using) to your rice cooker pot. Stir gently to combine.
- Close the lid and cook on the “white rice” setting according to your rice cooker’s instructions.
- While the rice cooks, finely chop the cilantro and zest the lime.
- Once the rice cooker switches to “keep warm” mode, fluff the rice with a fork.
- Stir in the chopped cilantro, lime zest, and lime juice. Taste and add more salt or lime juice as desired.
Useful Tips:
For a richer flavor, you can substitute olive oil for the vegetable oil.
If you don’t have fresh limes, you can use 1 teaspoon bottled lime juice instead of the fresh juice and zest.
However, fresh lime adds the brightest flavor.
