Ingredients:

  • 1 cup long-grain white rice
  • 1 ½ – 2 cups water (refer to your rice cooker’s instructions for water-to-rice ratio)
  • ½ teaspoon salt
  • 1 tablespoon vegetable oil (optional)
  • Zest of 1 lime
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice (adjust to taste)

Instructions:

  • Rinse the rice in a fine-mesh sieve under cold water until the water runs clear. This removes excess starch for fluffy rice.
  • Add the rinsed rice, water, salt, and oil (if using) to your rice cooker pot. Stir gently to combine.
  • Close the lid and cook on the “white rice” setting according to your rice cooker’s instructions.
  • While the rice cooks, finely chop the cilantro and zest the lime.
  • Once the rice cooker switches to “keep warm” mode, fluff the rice with a fork.
