Feijoada is a delicious Brazilian dish that typically includes black beans, pork, and various other meats. Here’s a basic recipe for feijoada:

Ingredients:

  • 1 pound of dried black beans
  • 1 pound of pork shoulder, cut into chunks
  • 1/2 pound of smoked sausage, sliced
  • 1/2 pound of bacon, chopped
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 2 bay leaves
  • Salt and pepper to taste
  • Water
  • Farofa (toasted cassava flour) for serving
  • Rice for serving

Instructions:

  1. Rinse the black beans and soak them in water overnight.
  2. In a large pot, combine the soaked black beans, pork shoulder, smoked sausage, bacon, onion, garlic, and bay leaves.
  3. Add enough water to cover the ingredients by a couple of inches. Bring the pot to a boil, then reduce the heat to a simmer.
  4. Cook the feijoada, stirring occasionally and adding more water as needed, for about 2-3 hours or until the beans and meats are tender.
  5. Once the feijoada is cooked, season with salt and pepper to taste.
  6. Serve the feijoada with rice, farofa, and any other desired accompaniments.
